FEATURES: Vidiano and Assyrtiko are rare types of white grapes, possibly two of the greatest Mediterranean varieties.
Vidiano and Assyrtiko in Crete gives not only high alcohol percentages but also a perfect balance provided by its crispness and minerality. We follow a controlled alcoholic fermentation in new oak barrels. The wine in the barrels is regularly stirred. Malolactic fermentation and batonaz for four months tends to create a unique wine with a fuller mouthfeel with a butter-like taste to it.
It has a brilliant straw colour with greenish shades and an aroma of butter ,lemon and matured fruit such as pear, mango and citrus .
On the palate the rich flavors of lemon peel enhance the appealing mouthfeel ,adding a well balanced finish.
TASTE HARMONY: Excellent assortment with fatty fish,salmon, shrimp in white sauces, asparagus, crab or lobster,roasted vegetables, Mediterranean and Asian cuisine. Best served at 8 -10 °C.
